Gluten Free Shortbread Cookies

So simple, yet so delicious!

1 cup butter **
2 cups gluten free flour mix (recipe to follow)
1/2 cup white sugar

Preheat oven to 300degrees.
Cream butter until soft, add in flour and sugar until smooth. Voila..thats it!!
** I found this amazing Butter-Vanilla extract by Lorann Professional Kitchen. I added a splash of this in case it wasn't buttery enough already!!
So the gluten free flour mix that I make and use for a ton of different recipes is this...

I call it Grandma's flour Mix
4 cups white rice flour
1 1/3 cup potato starch flour
2/3 cup tapioca flour
2 Tbsp xanthan gum

I keep this handy mixed together for all my favourite gluten free baking.

So scoop cookies onto greased cookie sheet and bake for 20 minutes.

First we get our equipment set up, 5 pails/lids/spouts.

















Next we find the maple trees in the back forest that we marked last year.

















Amy and I went out to drill 2 inch holes and set the spouts.



















The pails all set up and ready to collect sap.
















Sarah is my loyal sap collector.



















We are constantly boiling pots of sap. One this big will make only a liter jar of the final maple syrup. Crazy huh? We are now experimenting with boiling over a wood fire.


















You really have to watch it by this point or you will boil too long and make candy. (This is after about 7 hours)

















A jar of our final product - yum! A perfect Grade A Medium Amber.
